THE RECIPE OF THE SEASON

Polenta Soup With White Merlot

INGREDIENTS FOR 10 PERSONS
120g Farina di polenta integrale, precotta 12 min. by Terreni alla Maggia (wholemeal polenta farina, pre-cooked 12 min.) | 1 large onion, finely minced | 6 dl white merlot | 1 L chicken stock | 5 dl double cream | 50 g sunflower oil | 20 g butter | 10 slices of bacon | 10 chive stalks

 

PREPARATION
Melt the fat in a pan and lightly sauté the onion, without the onion losing its colour. Add the polenta farina and melt it with the oil in the same pan, then turn up the heat and let grill until a delightful smell fills the kitchen. Add the wine and bring it to a boil, mix in the stock and the cream and let boil for approx. 15 min. Puree with a hand blender and pour into the bowls. Garnish with a sautéed slice of bacon, stalk of chive, and some Valle-Maggia pepper (pepe alle erbe della Valle Maggia). Bon appétit!
